Serves 1 (or 2 as an appetizer). So we reccomend making 2 pizza for 2 people.
Ingredients- The non-negociables:
- 1 head of cauliflower
- 1 egg
- Salt & Pepper
- Shredded Cheese (whatever you’ve got cheddar, mozzarella…) I used a jalapeno jack. It is used as a binding agent.
Extra:
- Other italian spices optional (I personally added garlic salt & oregano).
- Pizza sauce (Any sauce)
- Toppings
Step 1. SHRED THE CAULIFLOWER HEAD
There is an easy way and a hard way to do almost anything. We’re making this the hard way today (because we don’t have a food processor).
HARD: Remove the greens from the cauliflower and cut into large pieces for shredding. Shred a whole head of cauliflower by hand into a microwave safe bowl.
EASY: Put cauliflower in a food processor or buy frozen riced cauliflower.
PLEASE BE CAREFUL! – I once had to bandage up and drive someone who cut the tip of their finger off in a mandolin, to the hospital. It’s not a good scene… Whenever I start to get too close to slicing my fingers, I put the small pieces aside and chop them up finely with a knife.
Step 2. MICROWAVE SHREDDED CAULIFLOWER
For 8 minutes. This will give you some time to clean up the shrapnel from the shredding and prepare the bowls for the next step.
Step 3. 2 BOWLS 1 CRUST.
In a mixing bowl, crack an egg and add the spices. Have another empty bowl ready, (or-measuring cup, mason jar, etc…) we’re going to squeeze out the cauliflower water into it shortly.
Step 4. Put a cheesecloth (dish cloth, or napkin) into the empty mixing bowl. Empty the microwaved cauliflower bowl into the cloth.
Step 5. Squeeze! Twist, and Squeeze some more. When you’re done, squeeze some more… You really want to get all of the water out. Use a strainer, watch your partner, you should get about a cup per cauliflower.
The reason you dumped this into a container and not directly into the sink is so you can add this nutrient dense water to a bucket of water and water your garden.
Step 6. Mix the cauliflower with the egg & spices. Add the shredded cheese. Vegan better movers, we have recipes coming for you! Unfortunately in this one, the egg & cheese are needed.
Step 7. Line a baking sheet with parchment paper. Do not add sauce or toppings yet. Cook in oven (preheated @400) for 15 Minutes. Flip and bake for 2 additional minutes.
Step 8. Remove crust from oven. (Tip: you can let it cool and freeze it in a ziplock bag for another time, just let it thaw before adding ingredients and)
Add whatever toppings you like. Only rule is the order. Sauce first, then cheese, then meat, then veggies (and maybe more cheese). This is how Dominos does it 😉
Bake for 3-5 minutes or, until cheese is bubbling.
